LOW FAT BLUEBERRY PROTEIN DONUTS

Blueberry donuts with glaze for the WIN! They’re almost like a mix of muffin, donut and donut holes.

 

Donut:
1 cup almond flour (like bobsredmill)
3/4 cup unsweetened apple sauce 
2 eggs
1/3 cup monk fruit sweetener 
2 scoops @mtnops vanilla protein 
1/2 tsp vanilla extract 
2 tsp cinnamon 
1 tsp baking powder 
1 cup blueberries - frozen or fresh 

Sugar Coating:
2 cups sugar free powdered sugar 
1 tsp vanilla extract 
1-3 tbl almond milk or milk of choice 

Mix all ingredients into one bowl except your sugar coating. Mix those into a separate bowl and set aside. Feel free to whisk your eggs prior to adding but all the ingredients will combine fine. Bake at 325° for 26 minutes. After they cool on a wire rack for about 6 or so minutes add them to the glaze coating mixture.
