PROTEIN CUPCAKES

Ingredients
- 1 CUP OF KODIAK PANCAKES MIX
- 1 CUP OF PROTEIN POWDER
- 2 EGGS
- 1 CUP OF MILK
- 1/2 CUP OF SUGAR
- 1/2 CUP OF COCONUT OIL
- 1 SCOOP OF STRAWBERRY PROTEIN
- 2 TBSP OF GREEK YOGURT
- 1/4 CUP OF COCONUT MILK
Instructions
- PREHEAT OVEN TO 350° F AND PREPARE A CUPCAKE
PAN WITH LINERS. - IN A LARGE BOWL, STIR THE KODIAK CAKES PANCAKE MIX, PROTEIN POWDER, EGGS, MILK, SUGAR, AND OIL UNTIL COMBINED.
- FILL THE CUPCAKE LINERS 2/3 FULL AND BAKE FOR 14-16 MINUTES OR UNTIL A TOOTHPICK INTO THE CENTER COMES OUT CLEAN. REMOVE FROM OVEN AND LET COOL COMPLETELY
- MIX 2 TBPS GREEK YOGURT, 1 SCOOP STRAWBERRIES AND CREAM PROTEIN POWDER, ¼ CUP COCONUT MILK TO MAKE FROSTING.
- DIP COOLED CUPCAKES IN THE "HEALTHY FROSTING" THEN GARNISH WITH SPRINKLES, AND STRAWBERRIES OR EDIBLE HEARTS.
