PROTEIN CUPCAKES

Endulge your sweet-tooth cravings with our somewhat healthy protein cupcakes. They're super easy to make and can totally score you some bonus points on Valentines, Anniversaries, you name it!
PROTEIN CUPCAKES

Ingredients

  • 1 CUP OF KODIAK PANCAKES MIX
  • 1 CUP OF PROTEIN POWDER
  • 2 EGGS
  • 1 CUP OF MILK
  • 1/2 CUP OF SUGAR
  • 1/2 CUP OF COCONUT OIL
  • 1 SCOOP OF STRAWBERRY PROTEIN
  • 2 TBSP OF GREEK YOGURT
  • 1/4 CUP OF COCONUT MILK

Instructions

  1. PREHEAT OVEN TO 350° F AND PREPARE A CUPCAKE
    PAN WITH LINERS.
  2. IN A LARGE BOWL, STIR THE KODIAK CAKES PANCAKE MIX, PROTEIN POWDER, EGGS, MILK, SUGAR, AND OIL UNTIL COMBINED.
  3. FILL THE CUPCAKE LINERS 2/3 FULL AND BAKE FOR 14-16 MINUTES OR UNTIL A TOOTHPICK INTO THE CENTER COMES OUT CLEAN. REMOVE FROM OVEN AND LET COOL COMPLETELY
  4. MIX 2 TBPS GREEK YOGURT, 1 SCOOP STRAWBERRIES AND CREAM PROTEIN POWDER, ¼ CUP COCONUT MILK TO MAKE FROSTING.
  5. DIP COOLED CUPCAKES IN THE "HEALTHY FROSTING" THEN GARNISH WITH SPRINKLES, AND STRAWBERRIES OR EDIBLE HEARTS.
