ELK TACOS

Ground elk is some of the leanest meat out there. Great tasting and good for you, and even more amazing when piled up inside a taco shell topped with all the fixins. Pull out some ground elk this week and let's make some tacos!
ELK TACOS

Ingredients

  • 1lb ground elk
  • 1 red onion
  • 1 - 2 avacodos
  • Hardshell or soft tortillas
  • 2 packs of seasoning (use 1.5 packs) Shredded red leaf lettuce
  • Cilantro - finely chopped
  • 2 tomatoes
  • Shredded cheese (suggested Colby jack) Sour cream
  • Black beans (optional)
  • Lime
  • Hot sauce (we used cholula)

Instructions

Cook some ground elk in your favorite skillet over medium heat 8 to 10 minutes, stirring occasionally, until brown, then drain. You can also mix in some taco seasoning if you so desire. I sure love it.

Heat up taco shells or tortillas, and melt on some cheese while they heat up in the microwave or on the stove top. Serve taco shells with elk, lettuce, tomatos/pico, onion, cilantro, sour cream, and some lime! Oh please… don't forget the lime!
